Wondering if there is a report or a place i can see how many NEW customers have been added for a week or a month or a year?

Rob,

You can run a Customer Address List or Customer E-Mail report. There is a filter for Date Created in each. This will allow you to select a date range for when the New Customers were added to RetailEdge.

Additionally there is a Last Action Date filter on these reports. This will allow you for instance to see things like all customers who were added to your customer database within the last year but have had NO action within the last year. Or you can mix and match to filter out the information you don't need.

is there anyway to save the same parameters fro each report so you can just run them and not have to remember how you got to them each time??

Yes,

There is a memorized report tab on the Report Selector. You just have to run the report, then save the last report. This will save all your settings from this report (filters/grouping etc.).
