Wow that is kind of a loaded question. But there are lots of things you can do:
1. Turn on security for a few items. RetailEdge has the ability to set security for every action. You can also have it set to 0 which won't prompt for a user name or password. So you might just set some things (like editing inventory) to make sure that they can't go in an manipulate the inventory directly. No one will know about it unless they try to.
2. If you don't want to turn on security, you could always set a "Last Action Date" filter on the inventory. Although this won't sort, it will allow you to just show items that have had action on them for the last X days. You can then scroll through the list and see if something looks fishy. One thing you can try is pressing the Qty History tab so as you are scrolling through you can easily see what quantity adjustments have been made to the items.
3. You could also run a Sell Through Report (from the Report Selector | Inventory|Items |Compound folder) by last action date. This report will show you inventory adjustments for on-hand, receiving, sold and has a column for "Other Inventory Adjustments". This column will only be non-zero if something does not add up, because in theory Beginning on-hand - Sales + Receiving should equal Ending on-hand quantities. If it does not, you will see an other adjustment, telling you something is not adding up. You can save this report and so you can quickly with 1 button just run the report every day or once a week depending on how often you want to check.
4. And getting back to your original question, you can always export the inventory (tools|Export) as a CSV file and again filter by last action date. This will allow you to open the file in Excel and sort to your hearts content.

This is not a problem and allows them to better serve customers and put in new stock, but for a safety check I would like to know what changes have been made to inventory. When I pull up the inventory manager and click on the heading "date" I am hoping to have the items sorted by date so I can see when changes have been made and to what items. Hopefully I wont find out I am being taken advantage of but I would like to make sure. I don't see an option in exporting the inventory into excel so that I could sort there. Please let me know if you have any tips or tricks that might help or that I haven't thought of.
