Purchase Order items have a "throw away" Size/Color field that is used only with items on a purchase order.  It can be useful to use this field when you are not tracking size or color with your inventory items but need to provide this information to vendors on the printed purchase orders.  When you receive these items into your inventory, the part/color of the item is not kept with the inventory item.
